site.yml: drop leftover node_exporter role refs

Earlier Pass 2 cleanup sed only matched bare '- node_exporter' lines; these used '{ role: ..., tags: [...] }' syntax which fell through. Deploys via Semaphore were erroring with 'role node_exporter not found'.
